- Lamb Cutlets Cooked In Vinegar
- (Costolette All'Aceto)

Ingredients:

- 6 fl oz (175 ml) white wine vinegar
6 tablespoons extra virgin olive oil
1 onion, sliced
1 fresh flat-leaf parsley sprig, chopped
2 cloves
8-12 lamb cutlets
Salt and pepper

- Directions:

- Mix together the vinegar, half the olive oil, the onion, parsley and cloves in a dish and season with salt and pepper.
Add the lamb cutlets and leave to marinate for 1 hour.
Meat the remaining olive oil in a frying pan, drain the lamb cutlets, add to the pan and cook for 2 minutes on each side until golden brown.
Transfer to a warm serving dish. Serves 4.
