- Sweet and Sour Peppers
- (Peperoni in Agrodolce)

- Ingredients:
-
3 tablespoons extra virgin olive oil
4 peppers, halved, seeded and thickly sliced
7 fl oz (200 ml) white wine vinegar
2 tablespoons sugar
Salt
Directions:
Heat the olive oil in a pan, add the peppers and cook over a low heat, stirring occasionally, for about 15 minutes.
Season with salt, then remove from the pan and set aside.
Pour the vinegar into the pan juices, stir in the sugar, increase the heat and cook, stirring, until the vinegar has almost completely evaporated.
Return the peppers to the pan and cook for a further 2 minutes, then transfer to a warm serving dish. Serves 4.
