- Red Peppers Sauce
- (Salsa di Peperoni)

- Ingredients:

- 2 large red peppers
2 tablespoons white wine vinegar
2 garlic cloves, chopped
3 tablespoons extra virgin olive oil
Salt

- Directions:

- Boil the peppers in salted, boiling water for just a few minutes, then drain.
Peel off the skins from the peppers, halve and remove the seeds and membranes.
Chop coarsely, then process the peppers in a food processor to a puree.
Pour the wine vinegar into a saucepan, add the garlic and heat for another few minutes.
Strain the vinegar into the food processor and add the olive oil.
Process until the sauce is smooth. Serves 4.
