- Peach Pie

- Ingredients:

Unsalted butter, for greasing
1 and 1/2 oz (40 grams) breadcrumbs
2 and 1/4 lb (1 kg) peaches, peeled, stoned and sliced
5 oz (150 grams) caster or superfine sugar
1 oz (25 grams) cocoa powder
4 eggs, lightly beaten
7 oz (200 grams) Amaretti, crushed
Directions:
Preheat the oven to 180°C (350°F) Gas Mark 4.
Grease an ovenproof dish with butter and sprinkle with the breadcrumbs, tipping out any excess.
Put the peaches in a saucepan with the sugar and cook over a low heat for about 10 minutes.
Remove from the heat and mash with a fork.
Stir in the cocoa, eggs and Amaretti, then pour the mixture into the prepared dish.
Bake for about 30 minutes, then remove from the oven, leave to stand for a few minutes and serve. Serves 6.
