- Onion and Thyme Frittata

- Ingredients:

6 eggs
- 11 oz (300 grams) onions, thinly sliced
- 2 fresh thyme sprigs, leaves only
- 2 tablespoons extra virgin olive oil
1 oz (25 grams) butter
Salt
Directions:
Heat the olive oil and butter in a frying pan.

- Add the onions and cook over a low heat, stirring occasionally, for about 5-6 minutes.
Stir in the thyme and cook for a few more minutes.
Meanwhile, lightly beat the eggs with a pinch of salt, then pour into the pan.
Cook until lightly browned on both sides. Serves 4.
