- Octopus In Red Wine
- (Polpi al Vino Rosso)

- Ingredients:
-
3 tablespoons extra virgin olive oil
1 onion, chopped
1 garlic clove
1 fresh sage leaf
1 fresh rosemary sprig
2 and 1/4 lb (1 kg) octopus, cleaned and cut into pieces
5 tablespoons red wine
2 bay leaves salt and pepper
Directions:
Heat the olive oil in a saucepan, add the onion, garlic, sage and rosemary and cook over a low heat, stirring occasionally, for 5 minutes.
Add the octopus and cook for a few minutes more, then pour in the wine, add the bay leaves and season with salt and pepper to taste.
Simmer over a very low heat for 1 and 1/2 hours.
Serve hot or cold. Serves 4.
