- Green Beans with Sesame
- (Fagiolini Glassati Al Sesamo)

- Ingredients:
-
- 1 lb and 5 oz (600 grams) French or runner beans, trimmed
2 spring onions, thinly sliced
- 1 tablespoon sesame seeds
- 1 oz (25 grams) butter
Strained juice and grated rind of 1/2 lemon
Extra virgin olive oil, for drizzling
Salt and pepper

- Directions:

- Cook the beans in salted, boiling water for about 10 minutes, then drain and set aside.
Melt the butter in a pan.

- Add the spring onions and cook over a low heat, stirring occasionally, for about 5-7 minutes until softened.
Stir in the lemon juice and rind.

- Add the beans, season with salt and pepper and simmer for a another 8-10 minutes.
Meanwhile, dry-fry the sesame seeds, stirring frequently, for about a minute until they give off their aroma, then remove from the heat.
Transfer the bean mixture to a warm serving dish.

- Sprinkle with the sesame seeds and drizzle with olive oil.
Mix well and serve. Serves 4.
