- Eggplant Rolatini

- Ingredients:
-
1 large eggplant
8 oz mozzarella cheese
1 jar sun dried tomato pate
1 bunch basil
Balsamic vinegar
Extra virgin olive oil
Directions:

- Slice the eggplant lengthwise and brush with olive oil.

- Lightly grill using an indoor grill or grill pan. Set aside and let cool.
Cut the mozzarella into thick strips.

- To assemble lay one piece of eggplant out on the counter.

- At one end place a piece of cheese, a basil leaf and 1 tablespoon of tomato pate and roll up the eggplant and set aside. Repeat till all pieces are done.
Place on a cookie sheet in the oven at 350° F for 3 to 5 minutes or until the cheese starts melting.

- Place on a platter and drizzle with balsamic vinegar and olive oil. Serves 4.
