- Caviar Risotto
- (Risotto Al Caviale)

- Ingredients:

12 oz (350 grams) risotto rice
3 tablespoons caviar
3 oz (80 grams) butter
1 onion, chopped
12 fl oz (350 ml) dry white wine
8 fl oz (250 ml) double cream
Salt and pepper
Directions:
Melt the butter in a saucepan.
Add the onion and cook over a low heat, stirring occasionally, for about 5 minutes.
Stir in the rice.
Pour in the wine and bring just to a boil over a low heat.
Gradually, stir in the cream and cook, stirring, until the rice is tender, adding a little boiling water if necessary.
Season with salt and pepper.
Remove the pan from the heat and add the caviar.
Stir vigorously until the risotto is an even color, then serve. Serves 4.
