Cozze alla Marinara
Did you know mussels that are whitish in color are the males, whereas the females have the strong orange color? Ingredients: Directions: Clean the mussels with the help of a wire brush, removing all the growths by holding the mussel firmly between index and thumb and pulling towards the large side. Wash them thoroughly under running water. In a very large saucepan, pour the oil, sauté the garlic, and before it browns add the red pepper, salt, wine and mussels. Stir them well and let them cook till the shells open. Discard the mussels that have not opened, sprinkle with parsley and serve hot. That's it!
Cannelloni con Carne
Ingredients: Ingredients for Pasta:
Directions: Preparation of Cannelloni Filling: Fry minced meat until light brown. Add salt and pepper. Drain oil from minced meat using spatula and set aside in a bowl or a plate. In a large bowl, mix ricotta, minced meat, eggs, bread crumbs, grated cheese, and chopped parsley with hands until well combined. Add salt and black pepper as desired. Set aside until the pasta is prepared. Preparation of Pasta: In a large sauce pan, bring water to a boil. Add olive oil and salt. Place all ten pasta squares in boiling water. Boil at high temperature for approximately 1 minute. Using a spatula, scoop one pasta square at a time from boiling water and set in a bowl of cold water for approximately 5 seconds. After cooling, lay pasta squares flat to dry on tablecloth. Conclusion: Divide filling equally onto pasta squares. Roll pasta squares into tubes and set aside. Spread the tomato sauce evenly over the bottom of glass flameproof dish. Arrange the cannelloni over the sauce. Spread a further layer of tomato sauce evenly over cannelloni. Sprinkle cannelloni with grated cheese. Seves 4-6. That's it!
Torta di Ricotta e Frutta
Ingredients: Directions: Dissolve the gelatine with a little water following the instructions on the envelope and keep aside. Whisk the egg yolks and sugar together till frothy, whip the cream and whisk the egg whites till firm. Mix the ingredients gently together adding the ricotta cheese and the gelatine. Place the ladyfingers regularly on the bottom of the cake pan and line the edges. Dilute the apricot jam in the warm water and pour a layer onto the ladyfingers. Add a layer of the cheese mixture, then, alternate jam and cheese mixture until they are finished. Wash and dry the raspberries and squirt the lemon juice over them. Decorate the top of the cake with the raspberries and place the cake in the fridge for 5 hours. Remove the ring and slide onto a serving dish with the help of a large spatula. Serve chilled. That's it!

BellaCiao.org - April 24 - Torture may be acceptable provided it is administered in small doses, says a bill under discussion in the Italian parliament that has outraged human rights organizations. The Chamber of Deputies yesterday passed an amendment, tabled by the far-right Northern League, to the bill which opposition MPs denounced as a green light to "limited" torture but which government supporters said was essential for police. The amendment says violence and threats must be used repeatedly to qualify as torture. The League said the previous wording had been influenced by police violence at the G8 summit in Genoa three years ago. "We ... have to make it clear that we don't support those who want to criminalize the police, making their job practically impossible," said Carolina Lussana, the League MP who drafted the amendment. Marco Bertotto, the chairman of Amnesty International in Italy, said the law did not respect the terms of a United Nations convention on torture which was ratified by Italy in 1988. Hmmm... Italian police do need a little freedom to smack around these fiends. After all, what's good in being an Italian cop if you can't abuse your power every once in a while?
And why not?
Take tourists, for example:
Tourists come over to Italy and complain about how dirty and smelly the train stations are. That’s because tourists, homeless people and drunk teens use them as bathrooms. People actually think Italian cops are thrilled to have to carry toilet paper in their holsters so they can help these people go to the bathroom.
They have completely emasculated our police departments!
The truth is Italian cops have been beating people all through history. It started back in the old days of Emperor Nero. There’s nothing really wrong with it and it's not a question of racism. There’s not a billy club in Italy that doesn't have chunks of skin and hair on it from all creeds, colors, religions and races.
