Sugo di Pomodoro
Ingredients: Directions: Peel and chop the tomatoes. Peel and finely chop the onion. Put the oil in a large frying pan and fry the onion. Cook for about five minutes, add the chopped tomatoes and a pinch or two of salt. Increase the heat and cook for another ten minutes. When you have removed the sauce from the heat, add the fresh basil leaves. This sauce is delicious in the summer time when plump, delicious tomatoes are readily available, and is suitable for all kinds of pasta. Remember to provide grated Parmesan cheese for those who wish. This sauce can also be used as a dressing for cold pasta. In this case try adding some chopped, diced mozzarella to the cold sauce; this lends a wonderfully fresh, tangy flavor to the dish. That's it!
Pennete alle Verdure Marinate
Ingredients: Directions: Cut the zucchini in 1/8 inch slices. Place on a cookie sheet. Sprinkle with some extra virgin olive oil and season to taste. Cook in a preheated 350 degree oven for about 3 minutes. Cool and cover with more oil if necessary to marinate. Slice the eggplants into 2 inch slices, season and lightly grill or broil until cooked. Cover with olive oil and 4 fresh whole garlic cloves and 5 basil leaves. Put the peppers in an ovenproof dish or on a cookie sheet and cook in a 350 degree oven for 30 minutes. Remove from oven and let them cool in a container covered with plastic wrap. When the peppers are cool, skin them and discard the seeds and inside membranes. Slice in thin strips. Marinate with drizzled oil, thyme and 1 clove chopped garlic. Slice the mushrooms and cover with olive oil, lemon juice and a sprig of chopped parsley. Blanch the asparagus in boiling water. Cut the spears off and slice the tender part of the remaining stalk. Set aside. Marinate the diced tomatoes in olive oil, 1 clove chopped garlic, chopped basil, salt and pepper. Let all the vegetables rest or marinate for 4 hours. For final assembly: Cook the pasta al dente in boiling salted water. Toss quickly with all the vegetables which have been drained from their marinades. Saute for a minute pan and serve. Serves 4. That's it!
Torta di Mele
Ingredients: Directions: In a large bowl mix together the yogurt, flour, sugar, eggs, oil, grated lemon rind, yeast and four of the apples, peeled and chopped finely. Grease and flour a cake tin and put the remaining sliced apples in the bottom: Sprinkle with lemon juice and sugar. Pour the mixture on top and put in the oven to cook at 180°C for thirty minutes. Sprinkle the surface with icing sugar before serving if liked. This flan is delicious just slightly warm but it can also be eaten hot with vanilla ice cream. That's it!
"Only In Italy" is a daily news column that translates & reports on funny but true news items from legitimate Italian news resources in Italy. Each story is slapped with our wild, often ironic, and sometimes rather opinionated comments. And now, for your reading pleasure: Naples Man Arrested: Wanted to Take Devil Out of Wife's Stomach. (AGI) - Naples - June 15 - A man of 45 years old, Antonio Crispino, was arrested for attempted murder because he wanted to cut open his wife with scissors and a knife to take the devil out of her body. It happened yesterday (but the information on the case was made public only this morning by the carabinieri) in Cardito, a small town in the province of Naples. The man attacked the woman, who was lying on a bed, and started screaming attracting the attention of his son who was sleeping in another room. When the carabinieri arrived, the man also flung himself against them. Once arrested he also attempted to kick down the window of the police car which accompanied him to prison. Crispino, who has committed some small crimes previously, now has to answer to a charge of attempted murder of his wife and a carabiniere. "Maria Santa!" I guess that old Neapolitan proverb is true: "If you visit Naples, you'll die!" If so, then everyone, lock yourselves in your hotel rooms the next time you visit the enchanted city.
What drives a Naples man to this behavior?
Naples has proven Darwin’s theory wrong. "Evolution stopped for a pizza with extra anchovies!
